½ c. frozen edamame
2 tbsp. water
2 plum tomatoes, cut into 1/4-inch cubes
½ c. frozen shoepeg corn, thawed
1 medium scallion, coarsely chopped
1 tbsp. lime juice
1 tbsp. coarsely chopped cilantro
2 tsp. minced jalapeno pepper
½ tsp. minced garlic
Toasted pita bread, crackers or tortilla chips, optional

Directions

  1. In a small microwave-safe bowl, combine edamame and water.
  2. Cover and microwave on HIGH for 6 to 8 minutes or until crisp-tender. Drain.
  3. In a small bowl, combine edamame, tomatoes, corn, scallion, lime juice, cilantro, jalapeno pepper and garlic.
  4. Cover and refrigerate 1 hour before serving.
  5. Serve with toasted pita bread, crackers or tortilla chips if desired.
