1 (12-to-14-oz.) pkg. Andouille sausage, bias sliced
1 yellow onion, chopped
1 red bell pepper, seeded and chopped
2 tsp. Cajun seasoning, or desired amount
2 c. That’s Smart! chicken broth
1 (14.5-oz.) can That’s Smart! diced tomatoes
8 oz. That’s Smart! elbow macaroni
4 oz. That’s Smart! cream cheese, cut into cubes
Green onions, chopped, for garnish

Directions

  1. Melt butter in a large stockpot over medium heat. Add sausage, onion, red pepper, and Cajun seasoning; cook 2 to 3 minutes or until vegetables have softened and sausage is blistered. Stir in chicken broth, tomatoes, and macaroni. Cover, bring to a boil; reduce heat. Cook 10 to 12 minutes or until pasta is al dente.

  2. Add cream cheese cubes to pasta. Stir and cook until melted. Remove from heat. Serve pasta topped with green onions, if desired.
