    2 to 3 c. all-purpose flour, divided
    2 tbsp. sugar
    1 tsp. salt
    1 tbsp. active dry yeast
    1 c. water
    1 tbsp. butter or margarine
    ¼ c. flax seed
    1 egg yolk
    1 tbsp. water
    coarse salt, optional
    additional flax seed, optional

    Directions

    1. In a large bowl, combine 1 cup flour, sugar, salt and yeast.
    2. In a saucepan, heat 1 cup water and butter over medium-high heat to a temperature of 120 to 130 degrees. Add to yeast mixture. Beat until well combined. Stir in 1/4 cup flax seed and enough flour to make a soft dough. Turn out onto a lightly floured surface.
    3. Knead, adding more flour as necessary, until dough is smooth and no longer sticky, about 4 minutes. Place in a well-greased bowl. Cover loosely with well-greased plastic wrap. Let rise in a warm place until doubled in size, about 45 minutes to 1 hour.
    4. Preheat oven to 375 degrees. Line baking sheet with foil. Lightly grease foil. Set aside.
    5. Punch dough down and knead about 5 times.
    6. Divide dough into 12 equal portions. Roll each portion into a 16-inch rope and shape it into a pretzel. Cover the portions not being rolled. Place on baking sheet. Cover pretzels and let rise for 5 minutes.
    7. Beat together egg yolk and water. Lightly brush on pretzels. Sprinkle pretzels with coarse salt and flax seed, if desired.
    8. Bake 15 minutes or until golden brown.
    9. Serve with mustard or melted cream cheese for dipping.
