1 c. boiling water | ||
1 tbsp. tomato sauce or ketchup | ||
1 c. dry TSP (textured soy protein) | ||
1 c. chopped onion | ||
1 c. finely chopped zucchini | ||
½ c. chopped bell pepper | ||
1 (8 oz) can tomato sauce | ||
¼ c. additional tomato sauce, or ketchup | ||
2 tsp. chili powder | ||
1 (4 oz) can chopped green chilies OR 1/2 c. salsa, if desired | ||
hamburger buns, for serving |
Directions
- Combine boiling water and 1 tablespoon tomato sauce or ketchup. Pour over TSP to rehydrate. Set aside.
- Saute onion, zucchini and bell pepper in a nonstick pan until tender. Add a little water if necessary to prevent sticking.
- Add rehydrated TSP and cook, stirring, for another minute.
- Stir 8 ounces tomato sauce, additional 1/4 cup tomato sauce or ketchup and chili powder into TSP mixture. Simmer for 5 minutes.
- Serve on hamburger buns.
