2 lbs. button or cremini mushrooms
4 sprigs fresh thyme
¼ c. extra-virgin olive oil
4 clove(s) garlic, thinly sliced
¼ tsp. salt
⅛ tsp. freshly ground pepper


  1. Preheat oven to 400 degrees. Line a baking sheet with aluminum foil. Spray with non-stick baking spray.
  2. Wipe mushrooms clean with a damp paper towel. Using a paring knife, trim mushrooms so they are all cut into 1/2-inch pieces.
  3. In a medium bowl, toss mushrooms with thyme, oil, garlic, 1/4 teaspoon salt and 1/8 teaspoon pepper. Spread mushrooms onto baking sheet in one layer. Roast 20 to 30 minutes or until browned.
