3 tbsp.Hy-Vee Select garlic-flavored olive oil
1 tsp.Hy-Vee salt
2 tbsp.fresh rosemary
2 lbs.red B-size potatoes
¼ c.freshly grated Parmesan cheese

Directions

  1. Preheat oven to 400 degrees.
  2. Stir together olive oil, salt and rosemary.
  3. Remove a narrow strip of peel from the middle of each potato.
  4. Place potatoes in an 8-by-8-inch baking dish. Stir in olive oil mixture to coat.
  5. Roast 45 to 50 minutes or until potatoes are fork tender, stirring halfway through cooking time.
  6. Top with Parmesan cheese before serving.
