Rosemary-and-Garlic Roasted Red Potatoes

1 tsp. Hy-Vee salt | ||
2 tbsp. fresh rosemary | ||
2 lbs. red B-size potatoes | ||
¼ c. freshly grated Parmesan cheese |
Directions
- Preheat oven to 400 degrees.
- Stir together olive oil, salt and rosemary.
- Remove a narrow strip of peel from the middle of each potato.
- Place potatoes in an 8-by-8-inch baking dish. Stir in olive oil mixture to coat.
- Roast 45 to 50 minutes or until potatoes are fork tender, stirring halfway through cooking time.
- Top with Parmesan cheese before serving.
