Roasted Garlic Crostini Spread

5 head(s) garlic, outermost papery layers removed
¼ c. olive oil

Directions

  1. Preheat the oven to 375 degrees. Put the garlic in a small oven-safe baking dish and drizzle with oil. Toss to coat evenly. Cover with aluminum foil and bake for 45 minutes. Uncover and continue to bake for 5 to 15 minutes or until bulbs are tender (but not dark brown). To test for doneness, use a clean towel to protect your hand and gently squeeze a bulb.
  2. Remove from oven once tender and allow to cool enough for handling.
  3. Use a serrated knife to cut each garlic bulb in half, crosswise. Squeeze garlic out of each half by hand or scoop with a small spoon. Return to baking dish and mash with a fork, along with any remaining oil left in baking dish. Mash to make a smooth puree.
  4. The roasted garlic will keep for up to 3 days, covered, in the refrigerator.
