    3 packet(s) ramen noodles
    1 large egg, beaten
    ½ c. milk
    1 c. cornstarch
    salt and pepper, to taste
    4 (6 oz each) tilapia fillets
    3 tbsp. canola oil
    1 tsp. butter

    Directions

    1. Remove noodles from packages, discard seasoning packets and place noodles in food processor or blender. Break noodles into the size of matchheads. Pour into pie or cake pan; set aside.
    2. Combine egg with milk in an additional pie or cake pan.
    3. Mix cornstarch with salt and pepper; place in an additional pie or cake pan.
    4. Dredge each fillet first in the cornstarch, second in egg wash and finally gently press each fillet into crushed ramen noodles, coating each side evenly with noodles.
    5. Heat canola oil and butter in large saute pan over medium heat. When oil is hot, place fillets in pan and cook until light golden brown, about 3-1/2 to 4 minutes on each side. Drain on paper towels.
