|1 (1.25 oz) pkg Hy-Vee taco seasoning mix|
|¾ c. low-fat sour cream|
|1 lbs. tilapia, cut into 1-inch chunks|
|¼ c. water|
|¾ c. mashed Hass avocadoes (about 2 large avocados)|
|4 Hy-Vee fajita-sized tortillas|
|4 c. shredded lettuce, divided|
|1 c. Hy-Vee shredded Mexican cheese blend, divided|
- Stir 1 teaspoon taco seasoning into sour cream; set aside.
- Coat tilapia with remaining taco seasoning. Cook tilapia, stirring frequently, in a large non-stick skillet over medium-high heat until tilapia begins to flake. Stir in water halfway through cooking.
- Spread each tortilla with 3 tablespoons each of seasoned sour cream and mashed avocado. Divide tilapia evenly among tortillas. Top with lettuce and cheese. Cut each tortilla into 4 wedges.
