Pineapple Pico de Gallo
Servings and Ingredients
|½||cored and peeled ripe fresh pineapple, diced|
|2||Roma tomatoes, diced|
|½||red onion, peeled and diced|
|1||jalapeno, seeded, stemmed and diced|
|1 tbsp.||Gourmet Garden garlic paste|
|¼ c.||fresh lime juice (from about 2 limes)|
|Salt and pepper, to taste|
- Toss together pineapple, tomatoes, onion, jalapeno, garlic and lime juice. Add salt and pepper to taste and toss again. Refrigerate leftovers.
