    ½ cored and peeled ripe fresh pineapple, diced
    2 Roma tomatoes, diced
    ½ red onion, peeled and diced
    1 jalapeno, seeded, stemmed and diced
    1 tbsp. Gourmet Garden garlic paste
    ¼ c. fresh lime juice (from about 2 limes)
    Salt and pepper, to taste


    1. Toss together pineapple, tomatoes, onion, jalapeno, garlic and lime juice. Add salt and pepper to taste and toss again. Refrigerate leftovers.
