Peach Flambe with Mascarpone-Filled Crepes (Get Cooking)
Servings and Ingredients
|2||(8 oz each) containers mascarpone cheese|
|¼ c.||heavy cream|
|¾ c.||firmly packed brown sugar, divided|
|½||vanilla bean, split lengthwise and scraped|
|¼ tsp.||Chinese five spice powder|
|4||peaches, unpeeled, each cut into 8 wedges|
|¼ c.||brandy, silver rum or whiskey|
- In a medium bowl, combine mascarpone cheese, heavy cream, 1/4 cup brown sugar and vanilla bean. Whisk until fluffy; cover and refrigerate until ready to serve.
- Spread 2 to 3 tablespoons of mascarpone cream on each crepe, then fold into quarters. Place on a serve platter.
- In a large skillet, melt butter with 1/2 cup brown sugar and Chinese five spice. Add peaches and cook for about 2 minutes, stirring constantly until tender. Add liqueur and ignite (flambe).
- Pour peaches and sauce on top of mascarpone-filled crepes and serve immediately.
