    ⅓ c. all-purpose flour
    ⅔ c. plus 6 tbsp sugar
    ¾ tsp. salt, divided
    2 c. milk, scalded
    3 large eggs, separated
    2 tbsp. butter or margarine
    1 tsp. vanilla, divided
    3 large ripe bananas
    1 baked 9-inch pie shell
    ¼ tsp. cream of tartar

    Directions

    1. Preheat oven to 325 degrees.
    2. Combine flour, 2/3 cup sugar and 1/2 teaspoon salt in saucepan. Add milk slowly, stirring constantly. Continue stirring and cook over low heat until thickened.
    3. Beat egg yolks. Add a little of the hot mixture to the egg yolks and mix well. Blend gradually into hot mixture. Cook 2 minutes. Add butter and 1/2 teaspoon vanilla. Cool thoroughly.
    4. Peel bananas and slice evenly over bottom of pie shell. Cover with cooled filling.
    5. Add 1/4 teaspoon salt and cream of tartar to egg whites. Beat until frothy. Add 6 tablespoons sugar gradually, beating constantly. Continue beating egg whites until stiff. Pile meringue over filling so it touches the pastry edge on all sides.
    6. Bake for 15 to 20 minutes or until meringue is delicately browned.
