    6 oz. Hy-Vee semisweet chocolate chips
    1 very ripe medium avocado, pitted, peeled, and mashed
    2 tbsp. Hy-Vee brown sugar, packed
    ¼ tsp. Hy-Vee vanilla extract
    ¼ tsp. lemon zest
    1 ½ tbsp. Hy-Vee unsweetened cocoa powder
    Desired toppers, such as: sweetened flaked coconut, sprinkles, nuts, and/or additional cocoa powder

    • Small ice cream scoop or tablespoon
    • Air-tight container for storage

    Directions

    1. Place chocolate in a microwave-safe bowl and microwave at 30-second increments, stirring in between, until melted and smooth.

    2. Stir in mashed avocado, brown sugar, vanilla extract, lemon zest, salt, and 1-1/2 tablespoon cocoa powder until well combined. Refrigerate until set, about 20 to 40 minutes.

    3. Us a small ice cream scoop or tablespoon to scoop out truffle mixture; roll into balls. Sprinkle or roll truffles in desired toppers, such as: sweetened flaked coconut, sprinkles, nuts, and/or additional cocoa powder. Store in the refrigerator in an air-tight container for up to 1 week.
