Chocolate Coconut Truffles
Try this recipe for a delicious and nutritious gluten- and dairy-free coconut treat.
Servings and Ingredients
|1 tbsp.||coconut oil|
|1 c.||almonds or walnuts, soaked for at least 4 hours or overnight and drained|
|6||organic dates, soaked in hot water to soften* (or sweeten with raw honey instead of dates, to taste)|
|3 tbsp.||raw cacao powder|
|¼ tsp.||sea salt|
- Place coconut oil, nuts, dates, cacao powder, vanilla and sea salt in a food processor and blend until desired consistency (may choose chunky or smooth texture)
- Roll into small bite-size balls and roll into shredded coconut. Refrigerate for 15 minutes to set.
- *Note: Soak dates in a few tablespoons hot water for a few minutes on one side, turn and soak for a few minutes on the other side.
