Chocolate Mint Holiday Truffles
Servings and Ingredients
|¾ c.||cocoa powder|
|⅔ c.||unsweetened coconut|
|½ c.||coconut oil, melted, plus additional if needed|
|1 tsp.||peppermint extract|
|1 c.||dates, pits removed (about 10 to 12 large dates), divided|
- In a food processor, combine almonds, cocoa powder and unsweetened coconut. Pulse until well combined.
- Add melted coconut oil, peppermint extract and 1/2 cup dates. Blend until well combined. Add remaining dates, and additional coconut oil if needed. Pulse until smooth.
- Transfer to a large bowl. Mixture may seem crumbly, but it will stick together once you mix it with your hands.
- Roll into 1-inch balls (1 tablespoon size) and refrigerate for at least an hour before serving. If desired, press mixture into an 8-inch-square pan and cut into squares for truffle bars.
