    1 c.Hy-Vee unsalted butter, softened
    ¾ c.Hy-Vee granulated sugar
    ¾ c.Hy-Vee brown sugar, packed
    1 tsp.Hy-Vee vanilla extract
    2Hy-Vee large eggs
    4 drop(s)green food coloring
    2 c.Nestle Toll House peppermint filled chocolate truffles

    Directions

    1. Preheat oven to 375 degrees. 

    2. Combine flour, baking soda, and salt in a small bowl. Beat butter, granulated sugar, brown sugar, and vanilla extract in a large mixing bowl until creamy. Add eggs, one at a time, beating well after each addition. Gradually beat in flour mixture and green food coloring. Stir in peppermint filled baking truffles. Drop by rounded tablespoonfuls onto ungreased baking sheets.

    3. Bake 9 to 11 minutes or until edges are golden brown and centers of cookies have just set. Cool on baking sheets for 2 minutes; remove to wire racks and cool completely.
