    ½ c. graham cracker crumbs
    ½ c. butter, melted
    1 ¾ c. sugar, divided
    ¼ tsp. salt
    3 (8 oz each) pkg cream cheese, softened
    1 tsp. salt
    5 large eggs, separated
    ¼ c. sifted flour
    2 ½ tbsp. lemon juice
    1 c. sour cream
    ¼ tsp. nutmeg or mace
    ½ tsp. almond flavoring
    1 tsp. vanilla
    fruit, optional


    1. Mix together graham cracker crumbs, melted butter, 1/4 cup sugar and 1/4 teaspoon salt. Press onto bottom and sides of greased springform pan.
    2. Mix cream cheese, 1-1/4 cups sugar, salt and egg yolks. Add flour and mix thoroughly. Add sour cream, nutmeg, almond flavoring and vanilla.
    3. Beat egg whites with the remaining 1/4 cup sugar until light and fluffy. Fold into mixture. Pour filling into graham cracker crust. Glaze with fruit, if desired.
    4. Bake at 325 degrees for 1 hour. Turn off oven and leave cheesecake in oven for 1 hour. Remove from oven. Cool completely and refrigerate.
