    1 tbsp. Hy-Vee Select olive oil
    1 small red onion, diced
    ½ red bell pepper, seeded and diced
    1 jalapeño pepper, seeded and minced
    1 c. Hy-Vee frozen corn
    2 c. cooked grains such as barley, quinoa and/or brown rice
    1 c. shredded cooked turkey breast
    ½ c. canned Hy-Vee black beans, drained and rinsed
    ¼ c. minced fresh cilantro
    Juice of 1 lime

    Directions

    1. In a large nonstick skillet heat oil over medium heat. Add onion, bell pepper, jalapeño and corn. Cook and stir 3 to 5 minutes or until tender.
    2. Stir in grains, turkey and beans; cook 2 minutes.
    3. Stir in cilantro and lime juice, and serve.
