¼ c. diced sweet onion
2 tbsp. Hy-Vee vegetable oil
3 c. cooked Hy-Vee instant brown rice
½ c. Hy-Vee dried cranberries
¾ c. Hy-Vee pecan pieces, toasted *
½ tsp. orange zest

Directions

  1. In a medium skillet, sauté onion in vegetable oil until tender.
  2. In a large bowl, combine onion, rice, cranberries, pecans and orange zest. Mix well.
  3. Serve immediately.
  4. * To toast pecan pieces, spread onto a shallow baking pan. Bake at 350 degrees for 10 to 12 minutes, stirring occasionally.
