1 (6.5 oz) jar quartered marinated artichoke hearts
2 c. cooked brown rice rotini pasta, measured after cooking
½ c. chopped roasted red peppers
¼ c. quartered Spanish olives
¼ c. shredded Parmesan cheese
1 tbsp. red wine vinegar

Directions

  1. Drain artichokes and reserve marinade.
  2. Toss together artichokes, pasta, peppers, olives and cheese.
  3. Whisk together artichoke marinade and red wine vinegar. Pour over pasta mixture. Toss well.
