1 tsp. Hy-Vee vinegar
3 c. water
8 oz. artichoke

Directions

  1. Pour vinegar and water into a 1-quart mixing bowl. Set aside.
  2. Cut off bottom stem and top 1-inch portion of the artichoke with a sharp knife.
  3. Cut off tips of leaves with kitchen shears.
  4. Soak artichoke in vinegar/water solution.
  5. Lift artichoke out of the bowl and shake off excess liquid.
  6. Wrap artichoke in plastic wrap.
  7. Place artichoke upside-down on microwave oven tray or on the bottom of the microwave oven.
  8. In a microwave oven, cook for 5 minutes and 30 seconds (in 700-watt oven) or for 3 minutes and 51 seconds (in a 1000-watt oven) at 100% power, until the bottom leaves pull away easily from the stem.
  9. Place on a plate and serve.
