    4 (6 oz each) tilapia fillets
    1 tbsp. Hy-Vee Select olive oil
    ¼ c. Hy-Vee Dijon mustard
    ¾ c. panko or plain breadcrumbs
    3 tbsp. chopped fresh parsley
    2 tbsp. chopped fresh thyme
    Salt and pepper, to taste

    Directions

    1. Preheat oven to 425 degrees. Rinse fillets and pat dry with paper towels. Brush a baking sheet with oil and place fillets, skin side down, on baking sheet. Spread mustard evenly on fillets.
    2. In a medium bowl combine panko, parsley, thyme, and salt and pepper to taste; mix well. Press panko mixture evenly on tops of fillets.
    3. Bake 12 minutes or until fish flakes easily with a fork and topping is golden. Serve immediately.
