    3 tbsp. Hy-Vee Select olive oil, divided
    ¼ c. Hy-Vee lemon juice, divided
    2 tsp. Hy-Vee Select red wine vinegar
    1 tsp. Hy-Vee Dijon mustard
    1 garlic clove, minced
    2 tsp. chopped fresh rosemary
    1 tsp. grated lemon peel
    4 (4 to 5 oz each) tilapia fillets
    Rosemary sprigs, optional

    Directions

    1. Preheat broiler. For the vinaigrette, in a small bowl whisk together 2 tablespoons of the oil, 2 tablespoons of the lemon juice plus vinegar, mustard, garlic, rosemary and lemon peel. Set aside.
    2. Coat a baking sheet with nonstick cooking spray. Place fillets on baking sheet. Season with salt and pepper to taste, and drizzle with remaining 2 tablespoons lemon juice and 1 tablespoon oil.
    3. Broil 4 to 6 minutes or until fish flakes easily with a fork. Top with rosemary sprigs (if desired) and serve with the vinaigrette.
