Directions
Cut the watermelon in half. Remove flesh creating 1-inch cubes and keeping rind intact to form a bowl; set aside.
Thread watermelon onto metal skewers. Pat cubes dry with paper towels and drizzle with olive oil. Place watermelon on preheated grill and grill 2 minutes on each side, or until charred.
Create sundae by layering lemon ice cream, lemon sorbet, and pistachio ice cream, and grilled watermelon in hallowed watermelon rind; drizzling occasionally with lime syrup. Garnish with fresh mint leaves, if desired. Serve immediately.
