    1 small seedless watermelon
    2 tsp. Gustare Vita extra virgin olive oil
    ¼ c. Rose’s lime syrup
    1 lime, zested and juiced
    1 c. lemon ice cream
    1 c. lemon sorbet
    1 c. pistachio ice cream
    Fresh mint leaves, for garnish

    • Small bowl

    Directions

    1. Preheat a charcoal or gas grill, with greased grill racks, over high heat.

    2. Cut the watermelon in half. Remove flesh creating 1-inch cubes and keeping rind intact to form a bowl; set aside.

    3. Thread watermelon onto metal skewers. Pat cubes dry with paper towels and drizzle with olive oil. Place watermelon on preheated grill and grill 2 minutes on each side, or until charred.

    4. Create sundae by layering lemon ice cream, lemon sorbet, and pistachio ice cream, and grilled watermelon in hallowed watermelon rind; drizzling occasionally with lime syrup. Garnish with fresh mint leaves, if desired. Serve immediately.
