    Paleta party! Paletas are fruit-filled popsicles popular in Mexico, and this recipe uses watermelon and kiwi to look just like a watermelon slice.

    1 ½ c. seedless watermelon, chopped
    ¼ c. plus 2 Tbsp. Hy-Vee granulated sugar, divided
    ¼ c. plus 2 Tbsp. water, divided
    3 tbsp. fresh lime juice, divided
    1 tbsp. mini semi-sweet chocolate chips
    ½ c. Hy-Vee plain Greek yogurt
    3 tbsp. Hy-Vee whole milk
    2 tbsp. Hy-Vee honey
    ½ c. kiwi, peeled and chopped

    • Blender
    • 10 (3-ounce) pop molds
    • 10 craft sticks

    Directions

    1. Combine watermelon, 1/4 cup sugar, 1/4 cup water, and 2 tablespoons fresh lime juice in a blender. Cover and blend until smooth.

    2. Pour mixture into 10 (3-oz.) pop molds, filling each 2/3 full. Freeze 1 hour. Add mini semi-sweet chocolate chips; gently stir and insert craft sticks. Freeze 1 hour. 

    3. Combine Greek yogurt, whole milk, and honey. Spoon over frozen watermelon layer in molds. Freeze 2 hours. 

    4. Combine kiwi, remaining 2 tablespoons sugar, 2 tablespoons water, and 1 tablespoon fresh lime juice in a blender. Spoon mixture over frozen white layer in molds. Freeze 4 to 6 hours.
