1 (16 oz) can Hy-Vee fat-free refried beans | ||
2 tbsp. Hy-Vee light ranch dressing | ||
2 tbsp. KC Masterpiece barbecue sauce | ||
8 (8-inch) Hy-Vee flour tortillas | ||
2 c. Hy-Vee 2%-milk shredded cheddar cheese, divided | ||
1 small red bell pepper, diced | ||
½ c. chopped fresh cilantro | ||
Hy-Vee sour cream, optional |
Directions
- Preheat oven to 450 degrees.
- In a medium bowl, mix together beans, dressing and barbecue sauce.
- Spread about 3 tablespoons bean mixture over top of each tortilla. Place on baking sheets.
- Sprinkle each tortilla evenly with 1/4 cup cheese. Top each with diced pepper and chopped cilantro.
- Bake for 8 to 10 minutes.
- Cut into quarters and serve with sour cream if desired.
