    8 Hy-Vee soft taco tortillas, divided
    8 tsp. light Boursin cheese, divided
    4 oz. smoked salmon, divided
    ¼ c. shredded Beemster cheese, divided
    Fresh dill, optional
    Hy-Vee sour cream, optional

    Directions

    1. Preheat oven to 400 degrees.
    2. Place 4 tortillas on a baking sheet. Top each with 2 teaspoons Boursin™ cheese, 1 ounce salmon and 1 tablespoon shredded cheese. Top each with remaining tortillas. Spray tops with non-stick cooking spray.
    3. Bake for 5 minutes, flip, and cook another 5 minutes.
    4. Cut into wedges and serve warm. Stir together dill and sour cream alongside, if desired.
