Smoked Salmon Quesadillas

8 Hy-Vee soft taco tortillas, divided | ||
8 tsp. light Boursin cheese, divided | ||
4 oz. smoked salmon, divided | ||
¼ c. shredded Beemster cheese, divided | ||
Fresh dill, optional | ||
Hy-Vee sour cream, optional |
Directions
- Preheat oven to 400 degrees.
- Place 4 tortillas on a baking sheet. Top each with 2 teaspoons Boursin™ cheese, 1 ounce salmon and 1 tablespoon shredded cheese. Top each with remaining tortillas. Spray tops with non-stick cooking spray.
- Bake for 5 minutes, flip, and cook another 5 minutes.
- Cut into wedges and serve warm. Stir together dill and sour cream alongside, if desired.
