    3 c. sugar
    1 c. vegetable oil
    1 ½ tsp. salt
    ⅔ c. water
    2 c. pumpkin
    3 ⅓ c. flour
    2 tsp. baking soda
    1 tsp. cinnamon
    1 tsp. nutmeg
    chopped nuts, optional


    1. Preheat oven to 350 degrees. Grease and flour three 8-by-4-inch loaf pans.
    2. Combine sugar, oil, salt, water and pumpkin in a large bowl. Fold in flour, baking soda, cinnamon, nutmeg and nuts. Divide among prepared pans and smooth tops.
    3. Bake for 55 to 60 minutes or until toothpick inserted in the center comes out clean.
