Eggless Pumpkin Bread

2 c. pumpkin | ||
3 ⅓ c. flour | ||
2 tsp. baking soda | ||

1 tsp. nutmeg | ||
chopped nuts, optional |
Directions
- Preheat oven to 350 degrees. Grease and flour three 8-by-4-inch loaf pans.
- Combine sugar, oil, salt, water and pumpkin in a large bowl. Fold in flour, baking soda, cinnamon, nutmeg and nuts. Divide among prepared pans and smooth tops.
- Bake for 55 to 60 minutes or until toothpick inserted in the center comes out clean.
