    Serves 16
    ¾ c. sugar
    ¼ c. canola oil
    2 eggs
    1 c. Hy-Vee pumpkin
    1 c. all-purpose flour
    ½ c. soy flour
    2 tsp. baking powder
    1 tbsp. pumpkin pie spice
    ½ c. Hy-Vee raisins
    ½ c. Hy-Vee dried cranberries
    ½ c. chopped walnuts, optional


    1. Preheat oven to 325 degrees.
    2. In mixing bowl, beat sugar and oil until well mixed. Beat in eggs and pumpkin.
    3. In a separate bowl, mix together all-purpose flour, soy flour, baking powder and pumpkin pie spice. Gradually add to pumpkin mixture. Add raisins, cranberries and walnuts. Pour into greased loaf pan.
    4. Bake for 1 hour at 325 degrees or until toothpick inserted into bread comes out clean.
