    3 c. sugar
    4 large eggs
    1 c. oil
    ⅔ c. water
    1 tsp. vanilla, optional
    1 (15 oz) can pumpkin
    3 ½ c. flour
    2 tsp. baking soda
    1 ½ tsp. salt
    1 to 1-1/2 tsp cinnamon
    1 tsp. nutmeg
    ½ c. raisins, optional
    ½ c. chopped walnuts, optional

    Directions

    1. Preheat oven to 350 degrees. Grease and flour 3 loaf pans.
    2. Whisk together sugar, eggs, oil, water, vanilla and pumpkin. Stir in flour, baking soda, salt, cinnamon and nutmeg. If desired, fold in raisins and nuts. Divide among prepared loaf pans. Pans should be half full.
    3. Bake for about 1 hour. Cool, wrap tightly and refrigerate or freeze.
