Crostini with Avocado Spread and Roasted Chicken
Servings and Ingredients
|Juice of 1 lime|
|½ tsp. chipotle chili powder, or to taste|
|½ tsp. Hy-Vee salt|
|1 ripe avocado|
|Chicken breast from Hy-Vee rotisserie chicken|
|Crackers or lightly-toasted, sliced Take & Bake French baguettes, for serving|
|Hy-Vee fresh salsa, optional|
- Combine lime juice, chili powder and salt in a medium bowl. Peel and seed avocado and mash into lime juice.
- Remove skin from chicken breast and thinly slice.
- Spread avocado spread on crackers or toasted bread slices. Top with chicken and fresh salsa, if desired.
