Chef Don's Creamy Mashed Potatoes

Serves 8
8 medium russet potatoes, peeled and cubed
1 tbsp. crushed roasted garlic, optional
4 oz. butter, melted
1 c. milk
1 tsp. salt
½ tsp. white pepper


  1. Place potatoes in a large saucepan or Dutch oven. Add cold water to cover. Bring to a boil and boil until potatoes are soft.
  2. Drain potatoes and place in a mixing bowl. Mash potatoes with a potato masher or electric mixer. Stir in garlic, if desired.
  3. Heat butter and milk in a small saucepan. Add salt and pepper.
  4. While potatoes are very hot, add the heated milk mixture. Mash or mix until smooth. Keep warm until serving.
