    1 (1.5 lb) bag Melissa’s baby Dutch yellow potatoes
    ⅔ c. Hy-Vee low-sodium chicken broth
    ¼ c. chopped green onions
    Hy-Vee salt and Hy-Vee pepper, to taste
    ½ c. Hy-Vee shredded cheddar cheese

    Directions

    1. In a large pot, cover potatoes with water and bring to a boil. Cook 20-25 minutes or until tender; drain potatoes.
    2. Return potatoes to pot. Add chicken broth and mash until desired texture. Stir in green onions and salt and pepper, to taste.
    3. Spoon potato mixture into a greased two-quart baking dish. Top with cheese and bake, uncovered, at 350 degrees for 20 minutes or until cheese is melted and lightly browned.
