Baked Mashed Potatoes
Servings and Ingredients
|1||(1.5 lb) bag Melissa’s baby Dutch yellow potatoes|
|⅔ c.||Hy-Vee low-sodium chicken broth|
|¼ c.||chopped green onions|
|Hy-Vee salt and Hy-Vee pepper, to taste|
|½ c.||Hy-Vee shredded cheddar cheese|
- In a large pot, cover potatoes with water and bring to a boil. Cook 20-25 minutes or until tender; drain potatoes.
- Return potatoes to pot. Add chicken broth and mash until desired texture. Stir in green onions and salt and pepper, to taste.
- Spoon potato mixture into a greased two-quart baking dish. Top with cheese and bake, uncovered, at 350 degrees for 20 minutes or until cheese is melted and lightly browned.
