Vegetarian Mashed Potatoes and Gravy
Servings and Ingredients
|3 medium potatoes, peeled, cubed|
|⅓ c. Tofutti Sour Supreme|
|1 c. Pacific Foods vegetable broth|
|2 tbsp. flour|
|salt and pepper, to taste|
- Place potatoes in a large saucepan with enough cold water to cover. Bring to a boil over high heat and cook until tender, about 15 minutes. Drain.
- Return potatoes to saucepan. Mash potatoes. Stir in Sour Supreme.
- Meanwhile, to make gravy, combine broth, flour, salt and pepper in a medium saucepan. Heat over medium heat. Simmer 5 minutes, stirring occasionally. Serve over mashed potatoes.
