2 lbs.Yukon gold potatoes, scrubbed and cut into 1-inch cubes
½ c.Hy-Vee skim milk
1 clove(s)garlic, smashed
2 tbsp.Hy-Vee butter
Hy-Vee salt and Hy-Vee pepper, to taste

Directions

  1. Place potatoes in a large pot. Fill with enough cold water to cover. Bring to a boil. Simmer, uncovered, until potatoes are very tender, about 20 minutes. Drain; return potatoes to pot.
  2. Meanwhile, heat milk and garlic clove in a small saucepan over low heat. Do not boil. Remove garlic clove.
  3. Mash potatoes using a potato masher. Add milk and butter and continue mashing until desired consistency is reached.
  4. Season with salt and pepper. Serve with additional butter, if desired.
