Chef Andrew's BLT with Homemade Chips

8 slices Hy-Vee cottage white bread | ||
4-6 tbsp. mayonnaise, to taste, divided | ||
8 slices ripened tomatoes | ||
2 avocados, halved, pit removed and sliced | ||
4-6 tbsp. crunchy peanut butter, to taste, divided | ||
1 recipe Homemade Potato Chips |
Directions
- Cook bacon according to Perfect Bacon Recipe
- Toast the 8 slices of bread.
- Spread 1 tablespoon mayo on 4 sides of toasted bread.
- Add 2 slices of tomato to 4 pieces of mayo toast.
- Arrange 3-4 slices of bacon evenly on top of tomato. (Break bacon slices in half to fit, if needed.)
- Add 3-4 slices of avocado on top of bacon.
- Spread 1 tablespoon peanut butter on remaining 4 slices of toasted bread. Place peanut butter toast on top of avocado and serve immediately with Homemade Potato Chips, if desired.
