    1 raw bacon
    8 slices Hy-Vee cottage white bread
    4-6 tbsp. mayonnaise, to taste, divided
    8 slices ripened tomatoes
    2 avocados, halved, pit removed and sliced
    4-6 tbsp. crunchy peanut butter, to taste, divided
    1 recipe Homemade Potato Chips

    Directions

    1. Cook bacon according to Perfect Bacon Recipe
    2. Toast the 8 slices of bread.
    3. Spread 1 tablespoon mayo on 4 sides of toasted bread.
    4. Add 2 slices of tomato to 4 pieces of mayo toast.
    5. Arrange 3-4 slices of bacon evenly on top of tomato. (Break bacon slices in half to fit, if needed.)
    6. Add 3-4 slices of avocado on top of bacon.
    7. Spread 1 tablespoon peanut butter on remaining 4 slices of toasted bread. Place peanut butter toast on top of avocado and serve immediately with Homemade Potato Chips, if desired.
