Servings and Ingredients
|1 lbs. halibut fillets, about 1-inch thick, thawed if frozen|
|2 tbsp. Hy-Vee Select olive oil, divided|
|½ c. sliced green onion|
|2 c. cherry tomatoes, halved|
|2 tbsp. chopped fresh dill|
|Salt and pepper, to taste|
- Preheat broiler. Rinse fish; pat dry with paper towels. Brush fish with 1 tablespoon of the oil; season with salt and pepper to taste. Place fish on broiler pan rack.
- Broil 4 to 5 inches from heat 10 to 11 minutes or until fish flakes easily with a fork, turning once.
- Meanwhile, in a medium skillet cook green onion in remaining 1 tablespoon oil until tender. Stir in tomatoes and dill. Cook and stir just until tomatoes are soft. Season with salt and pepper to taste.
- Spoon tomato mixture over fillets, and serve.
