|4 Roma tomatoes|
|2 tbsp. black olives, chopped|
|2 tsp. Spice Islands minced onions|
|½ tsp. Spice Islands garlic powder|
|2 tsp. Spice Islands basil leaf|
|2 tbsp. olive oil|
|3 tbsp. lemon juice|
|¼ c. white wine|
|4 (6 to 8 oz each) halibut steaks|
|½ c. feta cheese, crumbled|
- Heat oven to 425 degrees.
- Combine tomatoes, olives, onions, garlic, basil, olive oil, lemon juice and white wine in a medium bowl; set aside.
- Place halibut in a non-stick baking pan. Top with tomato mixture; sprinkle feta cheese over tomatoes. Bake 12 to 14 minutes, or until fish flakes easily with a fork. Serve with rice pilaf.
