    1 tbsp. Hy-Vee Select olive oil
    1 medium onion, finely chopped
    1 red bell pepper, seeded and finely chopped
    2 garlic cloves, finely chopped
    1 tbsp. finely chopped jarred jalapeno peppers
    2 (15 oz each) cans Hy-Vee black beans, rinsed and drained
    ½ c. Hy-Vee shredded taco cheese
    ¼ c. chopped fresh cilantro
    4 (10-inch) Hy-Vee whole wheat tortillas

    Directions

    1. Heat oil in large skillet over medium heat. Add onions, peppers, garlic and jalapenos. Cook and stir for 5 minutes or until onions and peppers are softened.
    2. Add beans and lightly mash. Cook for an additional 3 minutes, stirring occasionally. Stir in cheese and cilantro.
    3. Spoon about 3/4 cup bean mixture evenly down center of each tortilla and roll up.
