    1 (15 oz) can Hy-Vee pinto beans, drained and rinsed
    ½ c. Hy-Vee Select mild black bean and corn salsa
    ½ c. Hy-Vee shredded Colby jack cheese, divided
    4 Hy-Vee burrito-sized tortillas
    Hy-Vee sour cream and Hy-Vee Select mild black bean and corn salsa, optional

    Directions

    1. Puree beans and salsa in a food processor fitted with a steel blade.
    2. Place 1/4 of the bean mixture in the center of each tortilla. Top with 2 tbsp cheese. Fold sides over filling forming a square.
    3. Place seam-side-down on preheated countertop grill. Grill for 1 to 2 minutes or until filling is heated through and cheese is melted.
    4. Cut corner to corner and serve with sour cream and salsa, if desired.
