½ c. Hy-Vee Select mild black bean and corn salsa | ||
½ c. Hy-Vee shredded Colby jack cheese, divided | ||
4 Hy-Vee burrito-sized tortillas | ||
Hy-Vee sour cream and Hy-Vee Select mild black bean and corn salsa, optional |
Directions
- Puree beans and salsa in a food processor fitted with a steel blade.
- Place 1/4 of the bean mixture in the center of each tortilla. Top with 2 tbsp cheese. Fold sides over filling forming a square.
- Place seam-side-down on preheated countertop grill. Grill for 1 to 2 minutes or until filling is heated through and cheese is melted.
- Cut corner to corner and serve with sour cream and salsa, if desired.
