1 red bell pepper, seeded and chopped | ||

1 (15 ounce) can Hy-Vee fat-free refried beans | ||
¼ c. Hy-Vee orange juice | ||
8 (8-inch) Hy-Vee fajita-sized flour tortillas | ||
2 oranges, peeled, sectioned and coarsely chopped, divided | ||
1 (10 ounce) can Hy-Vee premium breast of chicken, drained and flaked, divided | ||
1 (8 ounce) package Hy-Vee shredded Colby Jack cheese, divided | ||
Hy-Vee HealthMarket pineapple salsa, for serving |
Directions
- Heat oil in a large skillet over medium heat. Cook red bell pepper and green onions for 3 to 4 minutes or until softened.
- Add beans and orange juice; cook and stir for 2 minutes or until beans are heated through.
- Wrap tortillas in paper towels and warm in the microwave for 15 seconds to soften.
- Spread heaping 1/4 cup beans down the center of each tortilla. Top each with 3 tbsp chicken, orange pieces and 1/4 cup cheese.
- Roll up tortillas and place in a greased 13-by-9-inch baking dish. Cover with foil and bake at 350 degrees for 15 minutes. Uncover and bake for an additional 5 minutes or until burritos are heated through, tortillas are crisp and cheese is melted.
- Serve with pineapple salsa.
