    Pretty with a mixture of red and green apples or grapes, or some red cabbage, for color contrast.

    Serves 8
    1 (10.5 oz) pkg silken tofu
    ¼ c. undiluted apple juice concentrate (not juice)
    2 tbsp. honey
    2 tbsp. lemon juice
    ¼ tsp. ground nutmeg
    4 c. finely shredded cabbage
    1 c. seedless grapes
    1 pear, cored and chopped
    1 apple, cored and chopped


    1. Make dressing by whirling tofu, apple juice concentrate, honey, lemon juice and nutmeg in a blender container until very smooth.
    2. In serving bowl, mix cabbage, grapes, pears and apples together. Pour dressing over the salad & toss well, being sure the apples and pears are coated to prevent browning.
    3. Serve well chilled.
