Autumn Fruit Slaw

Description
Pretty with a mixture of red and green apples or grapes, or some red cabbage, for color contrast.

¼ c. undiluted apple juice concentrate (not juice) | ||
2 tbsp. honey | ||
2 tbsp. lemon juice | ||
¼ tsp. ground nutmeg | ||
4 c. finely shredded cabbage | ||
1 c. seedless grapes | ||
1 pear, cored and chopped | ||
1 apple, cored and chopped |
Directions
- Make dressing by whirling tofu, apple juice concentrate, honey, lemon juice and nutmeg in a blender container until very smooth.
- In serving bowl, mix cabbage, grapes, pears and apples together. Pour dressing over the salad & toss well, being sure the apples and pears are coated to prevent browning.
- Serve well chilled.
