    4 (3 oz each) boneless pork chops, 3/4-inch thick
    ¼ tsp. Hy-Vee black pepper
    1 tsp. Hy-Vee canola oil
    ¼ c. Hy-Vee apple juice
    2 tbsp. Hy-Vee apple jelly
    2 tbsp. Hy-Vee Dijon mustard
    2 c. cooked Hy-Vee long grain and wild rice
    4 c. chopped broccoli

    Directions

    1. Season chops with pepper. Heat oil in large nonstick skillet over medium-high heat; brown chops on one side.
    2. Turn chops; add apple juice, jelly and mustard to skillet. Reduce heat to low, cover and cook 8 to 10 minutes or until internal temperature reaches at least 145 degrees. Let rest 3 minutes before serving.
    3. Spoon glaze over pork chops; serve with rice and broccoli.
