Waldorf Astoria Red Cake

Whipped Cream Frosting | ||
½ c. milk | ||
2 tbsp. flour | ||
¼ tbsp. salt | ||
¼ c. vegetable shortening | ||
¼ c. butter or margarine, softened | ||
1 c. powdered sugar | ||
Icing | ||
1 c. milk | ||
3 tbsp. flour | ||
1 c. butter or shortening, softened | ||
1 c. sugar | ||
1 tsp. vanilla |
Directions
- Grease and flour 9-by-13-inch pan or layer cake pans.
- Cream 1/2 cup shortening, 1-1/2 cups sugar and eggs.
- Make paste of food coloring and cocoa and add to mixture. Add buttermilk and cake flour alternately.
- Add baking soda to vinegar. Add 1 teaspoon vanilla, 1 teaspoon salt and baking soda/vinegar mixture to batter. Pour into prepared pan(s).
- Bake at 350 degrees for 30 minutes.
- Cool completely and spread with Whipped Cream Frosting or Icing, if desired.
- To make whipped cream frosting, boil 1/2 cup milk, 2 tablespoons flour and 1/4 teaspoon salt in saucepan until very thick. Set aside to cool completely. Mix in 1/4 cup shortening, 1/4 cup butter and powdered sugar. Beat 4 minutes with electric mixer. Add cooled flour mixture to shortening mixture and beat an additional 4 minutes. Frost cooled cake.
- To make icing, heat 1 cup milk and 3 tablespoons flour in a saucepan over medium heat until thick. Cool to room temperature. Beat together 1 cup butter, 1 cup sugar and 1 teaspoon vanilla. Stir into flour mixture and beat until fluffy. Frost cooled cake.
