2 oz. red food coloring

1 c. buttermilk
2 ½ c. cake flour, sifted 3 times
1 tsp. vanilla
1 tsp. salt
1 tsp. baking soda
1 tsp. vinegar
Whipped Cream Frosting
½ c. milk
2 tbsp. flour
¼ tbsp. salt
¼ c. vegetable shortening
¼ c. butter or margarine, softened
1 c. powdered sugar
Icing
1 c. milk
3 tbsp. flour
1 c. butter or shortening, softened
1 c. sugar
1 tsp. vanilla

Directions

  1. Grease and flour 9-by-13-inch pan or layer cake pans.
  2. Cream 1/2 cup shortening, 1-1/2 cups sugar and eggs.
  3. Make paste of food coloring and cocoa and add to mixture. Add buttermilk and cake flour alternately.
  4. Add baking soda to vinegar. Add 1 teaspoon vanilla, 1 teaspoon salt and baking soda/vinegar mixture to batter. Pour into prepared pan(s).
  5. Bake at 350 degrees for 30 minutes.
  6. Cool completely and spread with Whipped Cream Frosting or Icing, if desired.
  7. To make whipped cream frosting, boil 1/2 cup milk, 2 tablespoons flour and 1/4 teaspoon salt in saucepan until very thick. Set aside to cool completely. Mix in 1/4 cup shortening, 1/4 cup butter and powdered sugar. Beat 4 minutes with electric mixer. Add cooled flour mixture to shortening mixture and beat an additional 4 minutes. Frost cooled cake.
  8. To make icing, heat 1 cup milk and 3 tablespoons flour in a saucepan over medium heat until thick. Cool to room temperature. Beat together 1 cup butter, 1 cup sugar and 1 teaspoon vanilla. Stir into flour mixture and beat until fluffy. Frost cooled cake.
