Servings and Ingredients
|2 oz.||vegetable margarine or butter|
|8 oz.||onions, peeled and finely chopped|
|8 oz.||leeks, trimmed, washed and thinly sliced|
|1 tsp.||dried sage|
|4 oz.||fresh breadcrumbs|
|4 oz.||uncooked oatmeal|
|4 oz.||ground mixed nuts|
|1||free-range egg, beaten|
|salt and pepper, to taste|
|vegetable oil, for cooking|
- Melt margarine in a frying pan. Add onions and leeks. Cook over low heat until they are softened. Add sage, breadcrumbs, oatmeal, ground nuts, egg, salt and pepper. Mix thoroughly. Allow to cool enough to be handled.
- Shape the mixture in 6 large sausages.
- EITHER heat a little oil in a frying pan, add the sausages and cook until browned on all sides OR place sausages on a baking sheet, brush lightly with oil and bake in a 400-degree oven for approximately 25 minutes or until brown.
