Easy Cheesy Veggie Sauce

Description
For the smoothest sauce, shred the cheese and bring it to room temperature before adding it to the thickened cream.

2 tsp. Hy-Vee cornstarch | ||
8 oz. Artisan Soirée New York sharp cheddar or imported Swiss Gruyere cheese, shredded (2 c.) | ||
1 tbsp. snipped fresh chives | ||
1 tsp. Hy-Vee Dijon mustard | ||
Hy-Vee crushed red pepper, to taste |
Directions
- In a 2-quart saucepan, whisk together cream and cornstarch. Bring to boiling, stirring constantly; reduce heat. Simmer for 3 minutes, stirring constantly.
- Stir in cheese, 1/2 cup at a time, until melted and fully incorporated. Remove from heat. Stir in chives, mustard and crushed red pepper. Serve immediately, or cover and let stand up to 1 hour before serving.
