How do you turn meatless veggie crumbles into amazing tacos? Two ingredients: taco seasoning and Hy-Vee Short Cuts bell peppers.

1 (12-oz.) pkg. frozen Boca veggie crumbles
1 c. Hy-Vee Short Cuts chopped tri-colored peppers
1 (1-oz.) pkg. organic taco seasoning
¾ c. water
Corn tortillas, for serving
Avocados, peeled, pitted, and sliced for serving

  • Medium skillet

Directions

  1. Spray a medium skillet with nonstick cooking spray. Heat skillet over medium heat; add veggie crumbles. Cook, stirring occasionally until heated through, about 7 to 10 minutes.

  2. Add chopped peppers to skillet. Saute 2 minutes, or until heated through.

  3. Sprinkle taco seasoning over skillet. Stir in water. Cook 1 to 2 minutes or until water has absorbed. Remove from heat.

  4. Serve 1/2 cup taco “meat” over corn tortillas and top with sliced avocados.
