1 lbs. 90% lean ground beef, cooked | ||
1 (15 oz) can Hy-Vee whole kernel corn, drained | ||
1 (15 oz) can Hy-Vee black beans, rinsed and drained | ||
1 (14.5 oz) can Hy-Vee diced tomatoes with green chilies, undrained | ||
1 c. Hy-Vee medium salsa | ||
1 (6 oz) can Hy-Vee tomato paste | ||
3 Hy-Vee enchilada-style flour tortillas | ||
1 (8 oz) pkg Hy-Vee shredded Mexican blend cheese |
Directions
- In a large bowl, stir together ground beef, corn, beans, tomatoes, salsa, and paste.
- In a well-greased 4-quart slow cooker, place one tortilla in bottom. Top with 1/3 ground beef mixture and 1/3 of cheese.
- Repeat layers. Press remaining tortilla on top and top with remaining ground beef mixture. Refrigerate remaining cheese.
- Cover and cook on LOW for 6 to 8 hours or on HIGH for 2 to 3 hours or until done. Sprinkle with remaining cheese. Cover, turn off the heat and let stand 5 minutes.
