Tortilla Chicken Cheese Soup

1 (26 oz) can cream of chicken soup, plus ingredients called for on the can | ||
10 oz. Velveeta cheese, cubed | ||
1 (10 oz) can chunk chicken in water, drained and chopped | ||
½ (16 oz) thick and chunky medium salsa | ||
corn chips, for serving | ||
shredded cheddar cheese, for serving |
Directions
- Prepare cream of chicken soup as directed on can, in a medium heavy saucepan over medium heat.
- Melt Velveeta cheese into soup, stirring often. Add chicken.
- Add a small amount of salsa; stir in additional salsa according to taste.
- To serve, ladle soup into serving bowls. Cover with corn chips and sprinkle with cheddar cheese.
