Tortilla Chicken Cheese Soup
Servings and Ingredients
|1 (26 oz) can cream of chicken soup, plus ingredients called for on the can|
|10 oz. Velveeta cheese, cubed|
|1 (10 oz) can chunk chicken in water, drained and chopped|
|½ (16 oz) thick and chunky medium salsa|
|corn chips, for serving|
|shredded cheddar cheese, for serving|
- Prepare cream of chicken soup as directed on can, in a medium heavy saucepan over medium heat.
- Melt Velveeta cheese into soup, stirring often. Add chicken.
- Add a small amount of salsa; stir in additional salsa according to taste.
- To serve, ladle soup into serving bowls. Cover with corn chips and sprinkle with cheddar cheese.
